I finally got to do some ribs. It has been awhile since I've used the offset. I had the fire too hot to begin with. I'm using Original Charcoal. I've rubbed with mustard then applied Texasbbqrub. I'm foiling two of the slabs around 3 hours. I'll probably sauce two of the slabs with BBQ the last 30 minutes or so and used Pineapple pepper jelly to the the 3rd slab. I made the pepper jelly this past summer. I'm also spraying the ribs with apple cider every hour.

I had two little helpers who are now napping :D .




 
Ok...they are ready to take off. The left has pineapple pepper jelly the two on the right has Costa's BBQ sauce. I'm taking them over to a friends house where 10 of us (including the two helpers) will be having supper tonight.



I do love ribs!
