Used the rub I posted a while back in the recipee section. This rub has boo-koo amounts of Rosemary and I perhaps used a tad too much rub on this bird but I liked it.

I plan to make some of Cappy's South Carolina Hash with the 1/2 bird that is left over along with some PP in the freezer. I'll have to scale that recipee down some as it would be too large an amount for just the wife and me.

Cappy's South Carolina Hash is in the pot. I tried to scale it back....the verdict is still out. I found it in the recipee section -search for hash.

Wife announced she won't eat it over rice so I'm going to make her some eggnoodles and make some nice rice for me.
 
I'm sure you might be tired of the use of your screen name but..................Dat looks real good ;)
The ' taters were hash?
