between 200 and 225* and closer to 3 hours. Didn't use the thermometer for these, just kinda guessed at em.

That was quick! How did they turn out? When I do beef ribs, there is always a little toughness to them. Nice change every now & then from spares but I still prefer spares or backs.
 
They were not tough at all on the big end. They did not pull away from the bone on the other end. But very tastey. I pulled them as they started pulling back from the bone. They could have gone longer, I guess, but I was hungry for lunch and they looked about right! 8-[
