Rag - Looks like a good pepper crop. Mine are still bearing up a storm as they always do in the fall here in E Tenn. Hoping to go another 2 weeks without a frost b4 I harvest them. Putting a batch of paprikas on the dehydrator today. I think dehydrating at low temps may be the main difference between ours and commercial paprika. Mine take about 5 days to get dry and they retain their red color, whereas the commercial stuff looks roasted.
 
I just started using a dehydrator (a hand-me-down from my son). The first batch of paprika's only took a day and they came out dark red and a little charred like. Buy, man they taste good. Have a sweetness. The second, and last batch should be done tonight, after which I'll try grinding in my coffee grinder. I hope the powder tastes as good as the chunks.
