Any suggestion would be greatly appreciated. It is for me and my wife. It weighs about 3.5 LBS. I have never made one and seeing all of them on Christmas, I wanted to try one so.......

I cooked mine in the WSM..low and slow till the roast was at 118, then pulled the water pan and finished it at around 400 to set the crust. Pulled the roast at 120 and had perfect med rare.
 
You can do it Sapo. Just make sure you have a good remote probe and don't worry about the time. Both of the suggestions are spot on.
 
JP hit it right! Also, easy on seasonings, that bad boy has plenty of flavor from God, doesn't need anymore than salt, pepper, onion powder and a little garlic powder. Keep us posted.
 
10-4 ..... I read the info on the link and am counting down to New Years Eve to try it out... Got 2 lbs of Collosal Shrimps too.. Thanks again !!!Will post the results up in few days...Off to work now..

Holy Crap...that was an investment..Our Wegmans has them all the time for 6.99 a lb. Good luck, Cant wait to see the pics !
 
Heck SS send it up here to me and I'll cook it :LOL: Did my first one for Christmas and my son and daughter in law said that's what they want for Christmas dinner from here on out.

Have my own beer, but I'm enjoying the cook here and FB. I really wish I could get that $6.99 shrimp. I would tell you to have a great New Year's, but it is obvious you already are!
