I would like to know the do and don’t?
What’s the best setup?
How long dose it take to cook?

I can't come up with any other question right now if there some other information I should know please pass it on.

I have also order the charcoal basket, and warm plate for the side firebox.

Link, you will be setting it up for indirect cooking. I have a Weber kettle and I remove the cooking grate. Set the coals on both sides and the food will spin in the center. Set a pan under the food to catch drippings.( These can be saved for sauce) Start cooking and I figure 20 minutes per pound of food. About 45 minutes before the cook should end, I start taking reading with a instant read thermometer. Chickens are my favorite on the rotis. Marinade them, rub them down, making sure you get rub in the cavity, throw a stick of butter in the cavity and let them go. Enjoy and don't forget the pics!

You could go either way. I don't use salted butter, my colestrol (sp) is high and I'm adding my own with rubs so I have a little control.
