a new WSM owner.

I have 4 whole pork loins to cook for our FD shift party on saturday. I was thinking about doing a apple cider brine for 24 hours then giving them a healthy rubbing of WRO and smoking them at higher temps than normal. And finishing them with an apple chuttney.

I would like to try out the new WSM but not sure if they will fit or if I should try it out on my co-workers.

Any thoughts?

do somethin simple that won't take that long, like Ribs....that's what I did for my first cook on the WSM....simple and easy :D

Bill, here's a suggestion vs. brining!

Wolfe Rub Injection Marinade

2 Cups Apple Juice
1/2 Cup Wolfe Rub Original
1 Stick of Butter
1 TBS of Honey

Combine all ingredients and bring to a slow simmer until everything has melted. Cool completely, then inject into turkey, chicken or pork and cook as desired. This recipe works especially well with smoked turkey.

I know I make him nervous when I post over there. Doesn't seem to be a very active site.

You guys don't have to go to any other website other than this one to learn to cook on a WSM We can teach you in 1 or 2 easier lessons!

Gee, you would think with the "my way or the highway" attitude he presents that folks would be flocking to his site grappling for his wisdom. Afterall, if there's one thing we all know it's that there is really only one way to do BBQ and get it right. ;)
