Happy new year! We started ours out with Black eyed peas cooked up with some ham hocks. Cooked em up nice and juicy in the crock pot, served them over some rice just after midnight (along with some bubbly.....) Can't hurt right?

1 lb dried peas, soaked
1 large can rotel
1 small onion, diced
4 cloves of garlic, crushed
sage
1 ham hock and some chopped smoked ham for good measure
2 cups stock and enough water to cover beans.

After fully cooked add some chopped parsley and a few handfuls of chopped kale or chard.
