Fish doesn't need as much time to be smoked, your Smokey Joe will do fine. Definately thaw. For the halibuts, easy way is to marinade in Italian dressing, then pop em on and grill either direct or indirectly.

Have you ever planked salmon? You can do that on any grill. Let me know if you need info.
 
I've used hickory, but go easy with fish and smoke. I just got some apple and thats what I've been using on everything lately. I'll be cutting down a peach tree later this spring for some nice peach for late this year.
 
Halibut is one of the few fish that freezes and thaws well. Swordfish is the other one I can think of.

That being said next time turn it into tuna and grill it rare ;-)
 
IMHO halibut is meant to be beer battered and fried. The season is open and it's available fresh. Yumm.
