I meant to be up by 3am to get these 9lb+ butts on, but they didn't hit the smoke until 7am! :eek: So, I'm behind already......rubbed down with Wolfe Rub Original and I'm cooking over regular Kingsford and 4 big hickory chunks. I'm also using my new grate that arrived Friday, the others had seen better days!

I can't remember when the last time I cooked on my WSM's?? But I did a dry burn run through both of them on Friday to clean them up! The inside of both of them looked like a green sponge!! All clean now.

What can I say? Know they'll be turnin out great with you doin the cookin...Better keep an eye on 'em tho cause we know ya got a big, potentially drunk snake lurkin roun somewhere....
Note, Drunk Snakes can be vicious. Be Careful.

Where did you get the cool thermometer holder?

It's sand in the water pan covered with foil to make for easy clean up.....

The holder comes with the thermometers....

WHY?? I never have to adjust my vents at all........why would I mess with it and buy another pan??? Californians always spending more money! :roll:

PPFFFFFTTT....My lightweight pan kicks your sandy butt. Plus, somebody's gotta spend the funds to support you. Sheesh VAans....
 
I haven't had a pulled pork sammich in 6+ months..............ahhh.....I'm satisfied now!!!!! BURP!

Started a small Butt at 8:00am. It was later than I wanted to. It is cooking faster than I want it to, Im already at 150 and have only been on for a little over 3 hours. I have two vents closed on the bottom and the last one about 1/4 open. HelpI cant get it to come down from 270

 
butts are forgiving....relax. close all the bottom vents until
the temps falls, then you just need a sliver space in the vent
to maintain temps.
