Super Bowl Party! Yeah, I'm cooking again at the firehouse this year. Threw a chuckie on this morning and this bad boy is stubborn! On at 7:00 AM, just left a platau at 150*. Probably won't come off until after midnite so more pics will follow later this week. I'm gonna shrink wrap this and throw it in the freezer until Thursday night. Saturday will be a few fatties and maybe I'll start a couple of salamis this week. I've got ribs to do Sunday.

The rub is a mix of Big Ron regular and Big Ron Heat.

Tough piece of meat. But well worth the wait ;)
 
Here's the finished pics. It was all shrunk wrapped and froze. I took them out of the freezer Thursday night and today they get the hot water bath!
