getting a jump on the weekend

Our largest mixing bowl barely contains 2 butts. After sitting covered in the fridge for more than 12 hours, the upper ~2/3 was pretty lean but the bottom ~1/3 was extra fatty. Next time I have to store before bagging, I'll rig something for grease separation, maybe using the roast/canning rack that came with the pressure cooker.

Altho it's against my religion, about 11:30 I gave up on keeping cooker temps high enough (it was cold out) and brought the butts in to finish in the oven. After pulling at 1 a.m., I stuck the mixing bowl o' meat in the fridge and went to bed. I'll try to get some pics when we bag it this afternoon.
