What did you put on the beef ribs?

Helen,
I have Tex-Joy bbq seasoning on them. It is a peppery paprika based rub made in Beaumont Tx., that I like on beef. It is also on the chicken.

The ribs have a rub that I invented. I hope it is good because my wife is starting to wonder why I am making up rubs and pouring them in the trash can.

Image Shack delayed my results.

Chicken was great.

Beef ribs are not my favorite.

Spares were just OK. I am dumping the rub I mixed up. I gotta start making smaller batches for testing purposes

What didn't you care for with the beef ribs?

It may be that they were only 4 bucks for the the two 1/2 racks. They were real skinny. Also the beef ribs took on to much smoke in a hurry. I smoked them using the 3-2-1 method but they just didn't turn out as good as I was hoping. I'll try them again with a better cut.
