I use the mm method for all of my cooks. Once that bad boy settles in on a temp it will only burn the coals it needs. I also fill the ring with more charchol than needed, When your done with the cook, shut it down tight and the balance of the coals will extinguish themselves. Than I use the leftover coals for the next cook and add as needed to them.

Minion method for all cooks (except high temp) for me also. I would have told you 3/4 full, but Greg is probably wrong. It shouldn't take an hour to get to temp. Just fire it up, put the ribs on, and shut the dampers down to about 1/3 open when the temp gets to 200* - 210*.

3/4 full is way to much for 5 hrs...1/2 or less is plenty...you'll have some left to save if you want to I bet...That's how much I use when I do ribs.

As long as you keep an eye on the temp as it goes up you will be fine...it's when you walk away and forget about it that it can build and get out of control! :!:
