Last time I was at Costco I saw these packages of really lean eye of round. I bought a package of two. This first pic is what they looked like right out of the package and on the WSM with a little salt, pepper and garlic. The WSM was still running around 235* after two briskets.
I forgot to take a pic until one was sliced.
Both pieces sliced.
Sorry, no pics of the sandwiches but they were great. I did a reverse sear and pulled at 130* and then seared on the gasser. I'd probably pull a little earlier next time and there will be a next time. As you can see it was pink, thinnly sliced and very tender. Horseradish, of course.
