Finished this up with some carrots, corn on the cob cut short, and a topping of fresh spinach. Put the lid back on and let it cook another 30 minutes. It's from a New Mexico recipe that I modified a little using spinach instead of cabbage, and serrano peppers instead of bell pepper. The finsh;
