Day Off Brisket

Brisket on at 12:00 on this rainy day. Smoker ran around 300 for about 5 hours. I have to say that this brisket was one of the most tender briskets that I have turned out using the high heat method.

I flipped a few hours in so I could harden the bark a little. After an hour or so I flipped right back to fat down.

Cliff that brisket looks fantastic! I don't think it could of turned out any better.
My off-set Gator Pit likes to cook at about 275 degrees at the grate temperture and some times it may make it up to around 300 and at first I thought that would be to high but everything I cook on it turns out great so I like cooking a little hotter than some do too.

Cliff H. This post & pics have convinced me to give brisket another try! Man, that's the most moist slice of brisket I've ever seen Great job!
