Got four twelve pounders on the pit. Brined em 24 hours and put them on at midnight for a noon dinner tomorrow. Also made some sausage and cornbread dressing along with sweet potato polenta (grits). Cold and damp but the wind is down. Using mostly cherry and apple. Should be a long night! Working up to that Frozen few cook! Wood
 
I was gonna ask the same thing.......even at 220* those turkeys will be done in about 5 hours. Glad to see someone else that does birds low and slow! Good man Dave!

Where's the pic's??? Rules are rule BOY!
