80 lbs of butts. 80 lbs of brisket. Redskins with green beans, onions, and bacon. Baked beans. Garden salad. It is a wedding reception. Been up since 3:00 am. Butts on at 4:00, briskets (flats) on at 5:00 . Serving time 6:45. "Get it done early" is my motto!
 
This is business cooking. Unless I have a helper, I don't like to waste energy on taking pictures!!! Also, my hands are full whenever you can actually see anything!!
