Chuck Roast Italian Beef

I had a chuck roast, actually two I need to use up so Italian Beef was on the menu for tonight. I kept forgetting to grab the camera so only a few pics.

Cooked the chuck roast on the drum till 140* then placed in a foil pan with a jar of pepperoncini peppers, onion, beer, beef broth, Italian seasoning and pepper and foiled till roast reached 200*. Shredded/chopped the beef and strained the liquid and ran it threw a fat separator and added the beef and liquid back in the pan and on the drum till the fries were done.

Plated. Added some giardiniera to the sammie and decided to try making some Spanish fries and had a bowl of gravy to dip the sandwich in. Sammie was very good but very messy and the fries were good too. Have to do them Spanish style more often.

Looks great! That would be so much better on some crispy New Orleans poboy bread with some mayo and melted cheese on my plate.
