I have been cooking ever since I landed here in Tx.

First day was ribs. No pics though. The ribs were not that good but they got ate up.

The brisket turned out much better on day 2

The chickens were split and smoked one up and one down.

This is just my opinion but the one cooked skin down was not attractive at all but had the best flavor of the two.

The one cooked skin up made a better presentation and was good but was not as moist in the breast meat.
