Next time I use the smoker I was thinking about throwing on a bunch of Japs and trying my hand at homemade chipotles. Has anyone tried this?
 
We just had this discussion Saturday at my house. I have with little success, they were hot and smoky but thats about it. I like the large brown chipotles that are still a bit soft. When I was done they were dark and hard. I will try again but next time much slower and lower heat.
 
You need to go low and slow the ones I did took close to 24hrs...temp was 125*ish. If one was so inclined I would think a couple of hours in the smoke at low temps and then a move to a dehydrator would do the trick.
