Chickens, Ribs, Butts & Thighs Oh My!

Marathon cooking day and weekend for me folks. I'm blessed to have a couple of nice partys and friens to cook for. I say friend cus when yer the BBQ man at a party everyone calls you friend.

Any ways for tomorrow's party I need Pulled Chicken and smoked thighs and a few sides. I'll cook them up some some Denny Hamlinburgers and some spiral dogs too. Then on sat I have a pulled pork and Ribs party and 4 sides. That's at a friends house so I will cook butts here but the ribs on site all day for his party.

So I needed to start whole chickens to cook and then be pulled. I had 6 racks laying around and will finish filling the cooker with them. Thems is for me and friends who may be around later.

Here is what and where I am working with. I set up my ez up tent and am doing everything from preping to finishing and packing there.

I got big oven stuffers for more meat and less chicken bones when pulling. Here I have them all rub'd with my Pit Pirate Poultry Rub and my Rib Rub too. JB I know you lookin at this and wondering where my Pop is. Well it's still before noon when I was doing all of that so that's a water BOY.

I got all 9 set nicely on the front and slightly hotter side.

The Ribs. Hmmmm, I still see a little room. I wonder what I got in my meat locker I could slap in there?

I made my own thumbnails so I hope all that works. Ahhhh nope.

Gonna roll 8 or 9 Butts through the night and then grill about 90 thighs in the AM.

So it's been three hours and I see the chicken is doing great. The poper has popped on that one to the right but I want a few more degrees internal for pulling ease. They are close.

Ribs are doing nicely too. I'm not going to Foil those or Chef Paul would tan my hide but I will put them in an aluminum pan and loosely cover ro protect from direct heat as they cook a while more. Modified -3-2-1 method. I go 1- 1.5 on the second part.

Ribs are resting for a bit till they study for a Bend Test Pop Quiz I'm gonna grab them with later. I told them they would all get "sauced" later if they lay low for an hour or so. Look at'm. Their sleep'n. shhhhhh

Must have been Disco Freak Ckickens cus as the party started cooking all they Nipple rings started popping out every where. I took them out so they mother don't see them like that on the Internet in some Food Porn pictures with men hanging their toungs all out looking at them. Man I can't wait to video that typing is killing me. lol

So I cleaned up my work space and got it all sanitized again and set out my stuff. Hmmmm? Do I see another possible sponsor in the background? I feel like a NASCAR Team or JB with the flyer stapled to his shirt.

Thin mustard slather and a bunch of rub thrown at it. I don't maul my meat I hit it with Rub is all.

I threw all them Ribs out. They smelled funny. They smelled a "lil" funny when I opened them but were marked with a good date. They kept smelling funny while cooking and smelled funny when done.

That ain't funny and 6 racks went in the trash. Safety is before taste. They had to have tasted funny too.
 
I just had a feeling about them.

I will be telling the meat man at BJ's.
Thank goodness they were just for eating and not my friend's party.

Butts are rolling and I ain't opening to get ya'll a picture.
 
These babies like 252 degrees. Yeah I can't just cook like others. My Charbroil liked 240 degrees but these roll a nice 250.

Yeah wit I'll be checking even better. Grrrrr.

Ate some great pulled chicken tho. Takes as long to pull a chicken as a darn butt.

I got a picture but I need to cool off and regroup with a cold pop. I'm behind the ball and will have to work fast and hard in the AM after cooking butts tonight. My wife left her lights on and it cost me some shopping time. I can get into Sam's at 7am so that's cool and a buddy Stu is going to help.

Yeah there is some major pressure but it's all project managment, field engineering and seat of yer pants flighing.

JB, you just take that stuff and enjoy. The Rub is good on Pork and Chicken best. The small stuff is an old family Seasoned Salt. That stuff is great on anything, Shrimp, Crabs, Eggs heck I heard it'll make a bumble bee tast good. Open it up. Smell that? That's some Curry in there. BOY

MAN! What a great day. Fed 100 folks but my buddy Stu has the pictures. They booked us back for next year. Woo hoo.

It was a "Drop Off Delivery" but I took the big cooker for some "Bling". It worked.

I can sleep through the night and have a friend's party for 100 where I will go cook Ribs and Chicken and who knows what onsite. My favorite local band will play tomorrow at 8pm so I'll be on at 8:30.

I think BBQ and BS go hand in hand. On the way back Stu was HeeHaawing at how funny I was talking to the people as each came through the line. I grteeted everyone and gave them and great story about what was cooked. [some was true] Oh man it was too fun. Thanks Lord.

Ok, gotta wash stuff. Yeah the glamore of a bbq business. But Blessed!!
