I was pretty P.O'd with last comps chicken so I ask my neighbor to bring me something to practice on. It came out great.

While that was happening I made some ravioli. Yeah, they are ugly. But they are fresh and were stuffed with riccata cheese and spinach and covered with a tomato sauce. Slammin!

The chicken got done and I carried it over to the neighbor. He is resting now......

ALSO, I put some salmon in a brine/cure and some turkey legs as well. They will get smoked tomorrow. And oh yeah, a pork loin is getting turned into canadian bacon for later this week.
