I did a load of butts earlier this year with just cherry and the wife said they were the best ever.

With the birch I think you have to strip the bark off, it gives off a black smoke :!:

I used to use apple and hickory, but now I love cherry and hickory.
If you use both fruit woods together, might want to use a little extra, they are milder than hickory.

I love using apple and cherry for butts but I found last year that apple and pecan or cherry and pecan is a great combo, or just oak and pecan. Ive started to use more pecan and love it, pick some up and try it with anything pork.
