Today was a day of Q'n some pork butts and Jalapeno's stuffed with chorizo and cheese. The kids went nuts on the pork and then did the "Those Peppers Are Spicy" dance. There ere lots of runny noses after they ate.
I used a wood that we use in Hawaii called Kiawe (Kee-ya-vay). It has a very different flavor, but is realy mild and ads a great flavor to beef & pork.

Good looken shoulders. I do the exact same way but next time wrap those Jalaps with bacon. That's the way I learned em from Sappo. BBQs Galore carries Ono Lump. (see link below) I think it’s made with the same wood. Dem Hawaiians know how to do pork so there wood must be good. Reviews say it’s close to Mesquite in flavor and burn.

Looks good. I like the big chunks of pork butt sometimes over a fine pull...give ya something to chew on.
 
Great job Timmy, sorry I was absent. I agree with Tri Tip in that bacon will take those yummy lookin Japs to the next level. I need to grab my coffee can from you as I may smoke something this weekend. I'll call you.
 
Lew, its a variation of the Minion Method. You pour lit coals in the can. I think, Tim correct me if I'm wrong. I saw a vid on Youtube of some dude doing it that way.

P.S. Lew, "Is that a Valley thing", People in the Valley are the same as the IE and the OC. :LOL:

Easy Tri Tip. The Thousand Oaks/Conejo Valley is not considered part of the valley. :)
 
That is correct on both accounts (what Toby said and what TriTip said). I learned the minion method from my good friend Toby Keil. Thanks Tobe. ;-)

Looks plenty good to me! I've never served butt chunks before but looking at those, I think I'm gonna. Looks more appealing then even sliced.

Did I see that beer tab turned to the left? I do that too and wonder how many others do that.
 
Beer tab to the left; I've done it since I was in Jr High School, didn't want to loose my beer at a party. My buddy Jim puts his to he right.
I love the terminalogy; "BUTT CHUNKS"! That made me laugh!
