Just put 2 small briskets on. One rubbed down with KC Masterpiece BBQ Seasoning. The other with Montreal seasoning. I'm just too lazy to be creative today. Being that they were so small, (1 was 2 lbs., 1 3.5 lbs) I wrapped them in bacon before I threw them on. 3 chunks of hicory with them. Pics will follow later. I've also got 2 chicks for the rotis. on the grill for later.

I guess the late start time indicates the small briskets will be done faster?

That's not a guarantee! Nick may have a delicious breakfast ready in the morning! ;-)

2 questions....

1. did the bacon prohibit the smoke from getting in the beef?

2. do you have your own putting green in your back yard?

Answer to questions
Capt 1 It still had a smoke ring. Lots of moistness even in the smaller brisket.

2 Yes

Chris, I do that Monday - Friday, I'm not gonna do that on Saturdays also. Do you own a firetruck?

Larry NO
