The cypress smoker is alive and well TimBear. I've done about 10 cooks on it And it seems to be holding up well. On a long smoke I start out with about a chimny and a half of lump charcoal that will last about 4 hours. I'll add a handfull or 2 about every 1 1/2 hours for as long as it takes. It will chug along at about 230 to 250 all day. I had 13 lb brisket in the freezer I needed to cook . Put it on at 5 a m foiled it at 4 p m put it back on til 530 p m . It came out super.
