I do rest mine breast side down however. Wrap in foil and place in cooler breast down.

Neither. The few I've done, I've cooked vertically on a stand that holds them up like a beer-butt chicken. Why? Well, I got the stand because I'd bought one of those huge turkeys that are so cheap... and the best way to fit it in the WSM was vertically, on the bottom rack.
