Saw these sammies posted on an other forum and been wanting to try them myself.

I got to try my Guru today too other than just a short test when I first got it. This thing rocks. Except for when I opened the drum I never saw the temp fluctuate from the temp I set it at .

3 racks of baby backs rubbed with SuckleBusters Hoochie Mama rub overnight and in the smoker with some apple chunks at 230*

Ribs in the drum for 2 hours, just before getting foiled.

Foiled for 2 hours with a little apple juice added. Scored the bones and they came right out.

I was afraid they were going to fall apart so I sauced them and put them back in the drum in a foil pan. Left the bones in one of the racks.

Wow V! It looks fantastic. Wouldn't mind one of those Sammie's right about now. Just out of curiosity, what is your probe inserted into? Is that your imitation of Richard Dryfuss in Close Encounters of the Third Kind :D ?

Its just half of a potato I poked with a screwdriver first

Great post Vermin!! I bet if you took the probe out of that potato and buttered it up, you would have another side dish for your post. Really like the idea of taken the bones out of the slabs for sandwich making. I think the McRib still has the bone in. It's just steamed until it's soft enough so you can chew it.

Don't want to be critical but those ribs look too dam good to hide under some bread and slaw.
I almost bit my laptop.
