It's been a while since I've checked in but wanted to share a few cooks. Here are some ribs that took 7th and a brisket that, well, didn't???

It was kind of a tough weekend due to the rain and being settup so close to Wayne Toups and Travis Matt blaring the music until 0230!!

Them are some fine looking ribs you got there. What kind of smoker is that? Kinda looks like a spicewine. Congrats on placing with the ribs.

The Backwoods Smoker lets heat in from the top when using the diverter which has to pass through and out the bottom to get to the smoke stack. I cook them 'meat side up' and vary the distance from the top to control the color. The closer to being done the further from the heat and glazing begins.

Are those spares or beef ribs? Those be some big ole' bones stickin' out on the ends. :shock:
