I was runnin the smoker @250 grate cause I had tthat slab of pork spares in there. The beef was ready in 4hrs, the pork around 5hrs. No foil no baste no misting no sauce. I serve the sauce warm for them sauce heads.
I did have to foil the beef to keep em warm in the cooler, only cause they were ready 1st & the sides wern't done
