ABT's & Fajitas

Did some ABT's and beef and shrimp fajitas tonight all on The Extreme! Very good! Here's my version. I take 1 pound of cooked small shrimp and put through the food processor for a coarse chop. I then add 1 brick of cream cheese and 3 cups of grated cheddar cheese. I blend it well with my hands and then stuff the peppers. I top with 1/2 slice of bacon, sprinkle rub over the top and put in the pit.

Usually cook the peppers until they're done. About an hour or so, or until the bacon is good and crisp. I like my peppers a little firm, and not too mushy.
