Tonight was "Freezer Diving" night! I found a rack of St. Louis Spares that were cooked in December and I forgot I had! :D

So.........I whipped up some quick potato salad with what was on hand and opened a can of beans and plopped the ribs in a pot of water for the reheat. Great quick dinner!

The funny thing is that I find myself not wanting to eat too much BBQ after smoking it all day. Now I realize that these were reheated after a six month stay in the freezer. They still look good.

I'm the same way! Unless it's ribs, rarly do I eat the same day of the cook.

I don't like to eat the day of the cook either. But I'm also not huge rib fan to begin with, that's why I only ate three.
