40 more pounds of pork

I came up a about 3lbs short on the initial pork orders I had, mostly thanks to the bag I dropped on the floor and then I got a couple more orders yesterday. Back to Wegmans I went and got 4 more monster butts, smallest being 9.51lbs and the biggest being 10.41lbs. Rubbed them down and they went on the WSM around 6:30pm last night and they're sitting at 177 now, had to add a little fuel around 5:30am but overall an uneventful cook thus far!

I ended up with 18lbs of finished product from 40lbs raw meat. This is the second batch of Wegmans shoulder that has yielded less that 50%, BJ's butts are always 50% or more yield......

The white stuff on the bottom butts is the fat from between the fat cap and the meat on the top ones when I removed them. Nasty looking huh?

so they were extra fatty?

could you tell any difference in the taste or texture?

Well, they tasted no difference, but with the lower yield than normal I would say yes, they were more fatty!

How about it! Typically after a weekend of bbq and drinking beer all I have is a bad case of dehydration.
