3 - 2 - 1 Mehtod question?

If your gonna foil ribs and hour before to take them to a party or cater gig, do you need to foil them at the 2nd stage of 3-2-1? Thanks.
 
Are you going to reheat them on a grill or smoker when you get there or serve upon arrival?
 
If you're cooking spares I'd maybe cut the foil time to 1 hr.
Just keep an eye on them so they don't overcook.

Thats what im tryin to avoid. I wanna pull them they look so good but Ill let em go a bit longer. Ill get pics on this one too!
 
You didn't say anything about the kind of crowd.... If them want them "Falling off the bone", (people that don't KNOW)... then the longer in the foil... the better....but they don't make for "pretty" looking ribs...but again, a "party crowd" aren't gunna care.
 
I did the cook last night. It went real good. The ribs and PP were excellent. My favorite part was after we got there and I went to slice the ribs, I figured out I didnt bring a pan to put them in....My wife hauled butt to the store. $4 freakin dollars for a full size FOIL pan. It all worked out perfect! 10 racks of ribs and 14 pounds finished PP. I met a guy there who does whole hogs too. He walked over and shook my hand and said "those ribs are deliciouse". I was on cloud 9 and the rest of the night I had free beer. :LOL: :D :D :D ;)

Actually Ive never done that b4. I was just curiouse to see what was goin on. I still dont know what was goin on, but it turned out good! :LOL:
