If all vegan meals tasted like this, I might consider!
4 Tablespoons Canola Oil, divided
2 Medium Portobello mushroom, diced
1/2 each Red Onion, diced
1/2 each Green pepper, cored, seeded, diced
1 can Black Beans (15 oz), drained & rinsed
1/4 teaspoon paprika
1/4 teaspoon garlic
1/8 teaspoon ground black pepper
2 each egg whites
1 tablespoon Honey Mustard
1 tablespoon Worcestershire sauce
6 tablespoons bread crumbs, more if grilling
4 each Whole Wheat Buns
Condiments of your choice. Lettuce, Cilantro, Tomatoes, Onions, etc...
Heat 2 Tbsp. oil over medium heat. Add mushrooms, onion and bell pepper. Cook stirring occasionally, until pepper begins to soften, 4 - 5 minutes. Add beans, paprika, garlic powder and black pepper. Cook smashing beans with a spoon, 1 or 2 more minutes. Transfer mixture to a bowl.
Mix in eggs, mustard, Worcestershire sauce and bread crumbs. Form into 4 patties.
Wipe out skillet, heat remaining oil over medium heat and cook burgers until brown and they feel firm, 6 - 7 minutes each side. Place on buns, add toppings and enjoy.
If grilling instead of pan frying, make sure to oil up your grates so the burgers don't stick.
