Quick update....its 8pm and the internal temp of the ham is 141*F....I'm looking for 152-155*F....so I figure between 12 and 2 am..it will come off.
Its 11* outside..didn't feel that cold when I was out there in my Tshirt

Hams are done blooming and are ready to be wrapped and placed into the fridge….


And just for quality reasons…
 
Looks mighty yummy there Witt. Fine job. DATs not sure if you have access to any Albertsons stores but have occasionally seen fresh hams in there around this time of year..but not anything consistent. They mighty proud of em too if they happen to have some. Recall one year they had em priced up higher than a good quality already cooked ham. Now that don't make a lick of sense to me. Seems like the unpumped butts is getting easier to find in this part o the world. Even seen a John Morrell unenhanced butt not long ago which as far as I can recall is the first one I ever seen. That was either at Albertsons or Tom Thumb (Safeway).
