I guess if you've seen one you've seen 'em all, but here it goes...
Some Italian and some Country Style and a few links of a 50/50
blend of the two...

Chicken Parmesan with Sun Dried Tomato...



First grind coarse...



Second grind medium with seasonings...







 
Good looking sausage you got there, and I luvs me Yellowtail wine, good stuff for the price. Try the Shiraz.
 
Do look great Ompappy. Not sure how I missed this on the first go round. Try wrapping them with cheap bacon from stem to stern fastened with toothpicks and slow grilling on the charcoal or evil old gas grill sometime. Wowser..that about the only way I will eat sausage these days. Never seen that brand of casing but that is a real convenient size for us home hobbyist types. I bumped into the commercial brine hanks a few times. Dang I had them guts going everywhere. Looked like the 3 stooges trying to wall paper a house. Sounds like you got a real creative mind on the recipes. I got a good patent attorney standing by if you stumble over something earth shattering:)
