I want to make some Pastramia. I haven't made any before. I was going to use the Virtual Weber Recipe but can't find any Morton's Tender Quick. Usually Walmart has it but they don't have it now. I have Curing Salt #1 does anyone have a recipe for curing a brisket to make pastramia?
I have Reytuk's book and it has a recipe for 25 pounds. The brisket will probably be about 8 pounds after I remove the point.
