Deer (Venison) Jerky

I ground 4 pounds of Venison and used Uncle Buck's Jerky Seasoning regular flavor from the Bass Pro Store. It includes cure. I used the Jerky Cannon. I sprinkled one rack with Tony Chachere's the other with black pepper, and the last rack I left plain. I'm using hickory and apple wood.

The shooter really does work well. It just take alittle time to load the ground meat into it. Works just like a chaulking gun. In fact I believe a large chaulking gun would do the same thing. The jerky is coming along nicely. I've rotated the trays about every hour.
 
I took the jerky off at 1 AM this morning. It taste very good. I took some to the gun club and what I took is all good. I still have some at home though.
