I just posted a Bresaola recipe, it is a cured beef tenderloin that takes 7 to 8 days to cure. You will need a refrigerator that is not used much that you can keep at 38 degrees.

When I get the time I will post some info on cures and the recommended ways of safely curing meat.. The tip about using a fridge that it’s used a lot is a good one.
 
Well I been exposed to a lot of krewlish and unusual punishements in my day but to be tantalizing Tenderloin recipes to broke folks purty much takes the cake. Also got to run out and buy a new ice box dedicated to the project. You gonna be stuck in purgatory for a long time I think :LOL:
