Yet another Texan on board
Hello from Austin. I've been a lurker on this board for awhile, and finally decided to properly join in! I found my way here after many a youtube video from the man himself, 007bond-jb! Heeey boy!
I smoke on a standard WSM 18.5", minion method for low and slow, foiled clay saucer for the heat sink, K blue with oak for smoke and fruit woods for flavor. Grill on the kettle. I look forward to sharing (with pics ) and learning with you all!
Cheers,
Bruce

Re: Yet another Texan on board
Hey welcome Bruce. Austin is just too kewlish. You ever had the enchiladas from Matt's El Rancho? Yum yum. Some of the best I ever had. Hope they aint got creative and changed up the recipe or something. Now they could use my help on the margaritoes. They use some kinda funky limeaide .

Re: Yet another Texan on board
There was a taco stand that we use to eat at in the wee hours. It was a very small kinda portable deal. The tacos were DA BOMB. Wish I could remember the name of the place. Wait.....I have a friend that may remeber.
Hold that thought.

Re: Yet another Texan on board
Thanks, guys. I feel at home already. Bigwheel, Matt's still packs 'em in. And I'm sure the enchiladas are just as you remember. However, If you're ever in Austin and want to try something just a little more down home, check out Enchiladas Y Mas. Damn fine tex mex. And Cliff H., I have taco trucks at every corner in my neighborhood. And most of 'em have some mighty fine carnitas. However, If I'm drinkin' on 6th St., and lookin' for chow, I head to The Hot Dog King. Damn good drunk eats. And JB, thank you, boy!
