Smoking in South Dakota
I just found this site and thought I 'd say hey. I got into BBQ about 5 years ago straight into KCBS competition with the idea of it sounds like fun so what the heck. Started out building a frig smoker and now I cook with a homemade gravity feeder and a Lang 84. Nowadays I'm trying to expand beyond the big 4 meats to become a little more diverse.

This is an excellent forum with many knowledgeable members. We love pictures, of course this leads to the question you will hear, "Why are you taking pictures of the food?"

Hey welcome over here. Sounds like you jumped into the bbq scene full fledged. Now what kinda exotic proteins is we aiming to use to expand our horizons? I know how to cook armadillos and stuff like that. In fact all Tejas folks know how to cook anything..given enough Reynolds wrap..beer..butter onyawns etc. I refuse to eat Possums..since my Daddy seen some run out from the inside or a rotten cow one time. Gag..lol. That would be nearly as bad as eating an oyster or catfish. Scum sucking bottom dwellers ya know? Now hope this descriptive adjectives not get any lawyers in the crowd riled up..lol. I would not like to get sued yet again another time. Thanks.

Wirenut? Are you, or were you a 'sparktrician at any time in your life?
Welcome to the madness. Like has been said, we like pictures of pits/smokers, all of the food groups, but throw in one of the food being cooked outside with some smoke and fire, just to keep everybody happy. What's the most you've had on that Lang?

Yeah, we were having a local KCBS event and I had just made my frig smoker simply because my dad told me I needed to have one. I haven't got much of a clue on what to try. I pretty much go with the big 4 so I can tell myself that its practice. Got any ideas?

Yup, I wire for a day job until my BBQ stardom takes over and I can go full time as a BBQ idol! I will fire the Lang up for as little as 1 rack of ribs. I've never came colse to having it at capacity. We did burgers and dogs on it for the family reunion once and that was pretty full, btw, don't let anyone tell you that you can't grill on a Lang! Once I learn how to post up pics I'll give that a try.

I've had people tell me I can't grill on my Stump's. I just smile and ignore them.
You have to have at least 4 posts on the forum before the software will let you post pictures. It's kind of a "security" thing.
