Smokin newbie from Central Illinois.
When I was a kid my stepdad smoked food alot, especially at Thanksgiving. It was always super tasty. Up until a couple weeks ago I never had the desire to smoke food myself. I Have had ribs and brisket and the such at restaurants around here and nothing ever tastes like I hope it will. I bought some ribs a couple of years ago, lets just say, um, on the gas grill I have, the charcoal was not as black as one side of the ribs, total disaster. A couple of weeks ago my wife bought me me some ribs and not wanting to produce the same gut wrenching fantasticness I did last time I started looking into smoking and bbq-ing more. I havent even somked anything yet and I believe I'm hooked. I went to culinary school, so in the kitchen I can produce some of the best food you've ever put in your mouth, hopefully this skill will play nicely into the smoking aspect. Just today I was asking a friend of mine at work who smokes regularly about it. All the sudden he asks me when I work next I tell him tomorrow. He then tells me he is going to clean up his Weber Smokey Mountain smoker and bring it to me and I can have it for three weeks. We'll see how it goes. I have a lot of questions, and things im unsure about, but I'm sure I'll figure it out either on my own or with ya'lls help. Great forum here by the way, never guessed there was a forum dedicated to smoking some grub.
