Smokin in Omaha
Hey all, I'm not new to BBQ, but I am new to competitions. My first one was last weekend, and my team and I did well. 4th overall and second in wings. I think that some advice that I found here was very helpful. So thank you folks and I hope to share any useful ideas that I have FWIW. If i can figure out how to share pics here i will post some of my smokers

Hearty welcome. Congrats on the fine showing in the contest. We will be needing the wing strategy when you get time. Feels your pain on the picture posting stuff. Its real complicated.

I recently got this sidecar attachment for the old Chargriller. $70 at bass pro. I've been having fun experimenting with it.

I am still trying to figger out how you manged to get ahold of my electrified Brinkmann Gourmet. Could not survive without that little jewel. Bring it back..lol.

Jeff,
All ya got to do is get a 120 volt hot water heater element and plop a 10 inch cast iron skillet on it, that is after you drop off a case or brewskis at your welding bud's place to mount it in. I'm sure you can handle sawing the handle off with a hack saw. Might as well get a electrician to wire it for you you will need a thermostat from a electric range. a appliance repair dude can do it too. Send me a bus ticket I'll hook ya up.

Thanks. I have various electrical gizmos laying around everywhere. Never heard of running a water heater element in the dry mode. You tried it? These little chicom controllers work pretty good on the Electric Brinkmann.

Yes..it can make it go up or down..as long as the breaker on the circuit can tolerate the load. I have 15 and 20 AMPs and it aint popped either yet. An old chum has some kind of old electric cooker and he had relegated it to cold smoking chores..then he stumbled over the thing in the link. It gets hot enough for guvment work now. I hooked up to my Brinkmann just to make sure it worked and yes it did...but I have sorta learned to deal with the temps it maintains on its own. If you want to run the controller..its best to keep a fan blowing on it. The big thing that ruins them is too much heat. I have went through two high dollar router speed controllers..and it just fries those things since it dont have any way to vent the heat from the electronics. The little ebay gadgets have a built in radiator to shed the heat. Now bear in mind if you turn it down too low it will not have enough oomph to fire off the wood. Its a delicate balancing act..lol. Trying to throttle it back causes much more heat damage than letting it run wide open. Now if you got the same little cooker I have..best bet is to insulate it rather than trying to increase the heat. If it gets real nasty I put a UDS down over the top of it..lol

I do have the same little cooker you have! In the summer, temp isn't a problem. She runs a very workable 250-275. But in a few months, sweatshirt weather is going to set in. When It's 10 degrees outside, It's a struggle keeping It up to 225. I'm interested in Insulating it, but not sure how. How did you do yours bw?

thanks! I thought it would burn on there, but apparently I'm too low, slow, and lazy to melt a sticker.
