Good to have you on board 007, we are a little short on good cajun and creole recipes here...post away in the recipe section until we tell you to stop, of course, I doubt that'll happen.

Hi yall I didn't build the cookers Heres what they are my first smoker is a bullet type made Kelly manufacturing Co. (out of buss. now) It has 3 cooking grates & is a charcoal water smoker. I recently added a electric element I found I Academy sports so Its now duel fuel. My 2nd is a cast aluminum Char Broil charcoal pit. I have a newer Char Broil convertable grill gas/charcoal (read the mods made to it in the grilling section under the thread: "How hot do you cook your steaks") and last but largest is a OK Joes offset its the large one made with 20in pipe.
Ill post some Cajun recipes in the next few days, what would yall like homestyle, seafood or just any thing good? I have build a new computer for my Daughter right now.

Welcome 007,
I'm originally from New Orleans. I've been in North Carolina 21 years this coming May. My aunt lives in Ethel and my cousin lives in Zachary. Usually we try to go to Louisiana during the summer if we can.
