Ironically, I haven't made any Thai curries, as I'm so focussed on Indian at the moment. A good spicy Thai with green chillies and coconut creme is fantastic. Most restaurants I find serve it pretty tired though.
The only Quebecers I know are in Ontario now.
You DO realize "Cajun" is from the term "Acadian", which is Eastern Canadian?
What I would like to do is make a bbq version of Indian Steak (my own invention, hopefully) or some king of bbq tandoori, since I have the infrared capabilities on the cue.

Yes I did know them Acadians originally come from Canada eh? In fact some of them still call themselves by that moniker. Justeen Wilson always tole the story before his TV show. I tried a Tandori chicken one time. It sure come out red and the judges didn't seem to appreciate it too much.

The IT is what drives me to get bigass steaks n' stuff. This weekend I sure do need some. It's been one hell of a week.
This weekend:
- Chicken butchering (saves money, full control on chicken)
- Marination for Tandoori style
- Reverse sear steak (Chicago Style)
- Forward sear steak (uh...dunno)
