All that stuff sounds good to me. Hope you found some good specimines. Around these parts whut normally poses as beef ribs is sometimes also marked as soup bones. You know that got to be tasty. Nice old skinny grass fed ungraded cow. Yum yum. Actually aint had a decent beef rib since Winn Dixie went kaput in this area. Whew..thats been too long  Me and GOOD beef ribs plays well together. Like to choked to death on one of them old grill cooked stringy ones when I was about 11 and was an official boyscout. The scout master figgered out he couldn't chew em so he started giving a few away. I tore off a chunk and swallowed as my typical MO and that old stringy piece of meat got stuck in my throat. I couldnt very well give myself the hiney lick manuever since it hadn't been in bizness back in them days. Couldnt reach it anyway. At any rate when it finally dawned on me the air was shut off and I was fixing to die..I reached down in there and snagged it myself. Whew I was a fortunant young skull full of mush huh? Moral of the tale it chew slowly especially whew it come to sorry grilled beef ribs cooked by some knucklehead. Knows yours got to be mo betta than them others.
