Hi Everyone

I'm a Texan living in Pennsylvania. No place to find excellent, real BBQ.

Just bought a Lang smoker.

Looking forward to sharing some best practices for cooking brisket.

The Lang cooks much faster than I'm used to. Meat is coming out tough at proper temperature. Could sure use some advise...
